Vegan Veggie Alfredo

This is just to show you how easy it is to throw together a vegan meal and give, to those who are wondering, an idea of what you can eat on a vegan diet.

Pretty simple. Just take your favorite brand of pasta(just make sure there is no egg or dairy), Daiya dairy-free Alfredo, and whatever vegetables you have. I decided to use brown rice shell pasta, garlic, red bell pepper, rosemary, zucchini, leftover summer squash, mushrooms, spinach, tomato, sea salt, and pepper. I used a little bit of light olive oil for my veggies in the beginning and add water throughout cooking to keep them from sticking to the pan (I don’t like to use too much oil). Then, mix everything together. I can share more step by step recipes that take more preparation in the future. This is a good meal to throw together for lunch or dinner.
